- 2 tbspSugar-free BBQ sauceDeep, smoky flavor without the liquid sugar of standard BBQ sauce
- 1 tbspPlain non-fat (0%) Greek yogurt
- a dash eachGarlic powder and mustard (for the yogurt sauce)
👨🍳Method
Sauté the Veggies
4 minHeat a non-stick skillet over medium heat and coat lightly with zero-calorie cooking spray. Add the diced onions and chopped mushrooms. Sauté for 3-4 minutes until they are soft and slightly caramelized.
Brown the Beef
5 minTurn the heat up to medium-high. Add your extra-lean ground beef to the skillet with the vegetables. Season with salt, pepper, and garlic powder. Cook for 4-5 minutes, breaking the meat apart with a spatula until completely browned.
Glaze the Meat
2 minReduce the heat to low. Pour the sugar-free BBQ sauce directly into the skillet with the beef and veggies. Toss for 1-2 minutes until the sauce reduces and creates a thick, sticky, smoky glaze over the meat. Remove from heat.
Assemble the Wrap
2 minLay your low-carb tortilla flat. Mix the Greek yogurt with a dash of garlic powder and mustard, then spread it down the center. Layer the shredded lettuce and tomato slices. Spoon your hot, BBQ-glazed beef and mushroom mixture directly over the cold veggies. Top the hot meat with your slice of light cheese so it begins to melt.
Fold and Toast
3 minTuck the ends of the tortilla in and roll it up tightly. Wipe your skillet clean, give it one more light spray of cooking spray, and place it back over medium heat. Place the wrap seam-side down first to seal it. Cook for 1-2 minutes per side until the tortilla is crispy and golden brown.
Serve
1 minCut the wrap cleanly in half and stack the two pieces to show off that beautiful, meaty cross-section. Enjoy hot!
