- 40gMixed forest berries (raspberries, cherries, or cranberries)

Prepare the Vanilla Cream
2 minIn a small bowl, mix the vanilla whey protein powder, plain non-fat Greek yogurt, and sugar-free vanilla pudding mix (if using). Slowly whisk in the almond milk or water 1 tablespoon at a time until you get a smooth, thick, and creamy vanilla sauce. Set it in the fridge to chill and thicken.
Blend the Batter
1 minIn a blender or small food processor, combine the liquid egg whites, ripe banana, oat flour, and baking powder. Blend until completely smooth.
Cook the Pancake
5 minHeat a non-stick pan over medium heat and lightly coat it with zero-calorie cooking spray. Pour the batter in to make one large pancake. Cook for 2-3 minutes per side until fully cooked and golden brown.
Chop
1 minRemove the pancake from the heat and let it cool for a minute. Using a knife, chop the pancake into small, bite-sized squares or strips.
Assemble the Jar
1 minIn a wide glass jar or a deep dessert bowl, add a layer of the chopped pancake pieces. Pour your chilled, thick vanilla protein cream generously over the pancake pieces so it seeps into the gaps.
