Prep the Veggies
6 minBring a small pot of lightly salted water to a boil. Add the sliced carrots and boil for 2 minutes, then add the broccoli florets. Boil for another 3-4 minutes until both are fork-tender but still vibrant and slightly crisp. Drain and set aside.
Mix the Sauce
1 minIn a small ramekin (just like the red one in the photo), whisk together the sugar-free ketchup, non-fat Greek yogurt, and hot sauce until completely smooth.
Form the Patties
2 minDivide your extra-lean ground beef into two equal 125g portions. Form them into thick, wide patties. Season both sides generously with salt, pepper, and garlic powder.
Cook and Ooze (The Steam-Melt Trick)
10 minHeat a non-stick skillet over medium-high heat. Coat it lightly with zero-calorie cooking spray. Sear the patties for about 4-5 minutes on the first side to get a great crust. Flip both patties. Immediately place one slice of light cheese on each patty. Add a tablespoon of water to the empty space in the hot skillet and quickly cover it with a lid. The trapped steam will perfectly melt the light cheese so it drapes heavily over the beef in about 2-3 minutes.
Plate and Serve
